french onion dip



1 tsp olive oil
1 small onion
1 bunch green onions
16 oz. nonfat greek yogurt
1/4 cup olive oil mayonnaise
1/4 cup light sour cream
1/2 tsp garlic salt
2 tbsp dried onion flakes
1/2 tsp black pepper

heat olive oil in pan.  thinly slice the onion and whites of the green onion.  add onions to hot pan and cook until golden brown.  set aside and let cool.  thinly slice the greens of the green onions.  stir together remaining ingredients.  once the cooked onions have cooled, stir them into the yogurt mixture.  serve with potato chips or veggies.

caramel apple s'mores


cinnamon graham crackers
granny smith apples, thinly sliced
rolos
marshmallows

set half of a graham cracker with 2 rolos placed on top on a piece of foil and set next to a warm grill/camp fire.  when the rolos are gooey place 2 apple slices on top and then add a roasted marshmallow and the top graham cracker.  tastes like a combination between s'mores, caramel apples, and apple pie...so yummy!

wish list

brighton bag(s):  i saw these adorable bags in the hospital gift shop while we were visiting blake's pawpaw last week (he had a mild heart attack, but is back home now and doing better).  i kind of like these better than the vera bradley bag...i just don't know if i want to spend the extra money and i don't know how i could decide between these three!

eggplant stackers


1 large eggplant
2 tomatoes
fresh mozzarella, sliced
1/4 cup olive oil
3 tbsps balsamic vinegar
salt and pepper
fresh basil, chopped

preheat oven to 425.  slice eggplant and arrange in single layer on a baking sheet.  in a bowl, mix together olive oil, balsamic and salt and pepper to taste.  brush olive oil mixture onto the eggplants and roast in the oven for 10 minutes.  after 10 minutes, flip the eggplants over, brush on more olive oil mixture and return to oven for another 10 minutes.  in the meantime, slice the tomatoes and put them in a single layer on a baking sheet.  brush with the olive oil mixture and bake in the oven for 3 minutes.  once the vegetables are cooked, assemble the stacks by layering an eggplant, tomato, slice of mozzarella and some basil.  repeat to finish one "stacker."  once you have made all the stackers, return to oven for 5 minutes so that the cheese melts and is nice and gooey!  serve with toasted french bread.

we make this dish a lot in the summer since we grow eggplant, tomatoes, and basil in our garden.  i also recommend eating the dish with a steak knife...the eggplant, tomato and cheese are too difficult to cut using a fork or regular knife.

jonathan & candice














we went to such a fun wedding last night in stillwater.  candice is a family friend of ours from mcloud and we are so happy for her.  the wedding was gorgeous and the reception was perfectly planned!  macie loved the reception...she was quite the dancer and had a blast dressing up for the photo booth.  she was also mesmerized by candice and her princess dress.  in one of the pictures she was giving the father of the bride a high-five for inviting us to such a great party!

balen & macie














my cousin, annie, and her sweet boy, balen, came to visit us this week.  macie and balen had so much fun playing together and annie and i were able to sympathize with each other on how much energy 2 year olds require! annie is also in to photography so we took the kids out to the farmer's market one evening and did a little photo shoot.  wish we lived closer...it was a fun couple of days!

jalapeno poppers



15-20 jalapenos
8 oz. softened cream cheese
3 cups cheddar cheese
salt and pepper to taste
bacon strips, cut in half

cut jalapenos in half length wise and remove seeds (i would wear plastic gloves to do this...unless you want you finger tips to burn the rest of the day).  mix together cream cheese, cheddar cheese, salt and pepper.  fill jalapenos and wrap with half a strip of bacon.  use toothpicks that have been soaked in water to secure the bacon to the peppers.  grill until bacon is crisp.

this is a really good make ahead recipe for cookouts.  you can store the stuffed peppers in the refrigerator until you are ready to put them on the grill.

vinegar cucumbers


3-4 cucumbers
1 red onion (optional)
2 cups vinegar
1 cup water
2 tbsp vegetable or canola oil
1 tbsp sugar
1/2 tsp oregano
salt and pepper

slice the cucumbers (taste each to make sure they are not bitter) and onion and place in bowl.  combine remaining ingredients and pour over the cucumbers and onion.  let set in the refrigerator for several hours or overnight, stirring occasionally.

memorial weekend









lots of my mom's side of the family met at her house over the weekend.  we ate tons of good food and had lots of fun.  saturday night my mom, blake, and uncle carlous put on a concert for us while we ate homemade ice cream and chocolate cupcakes to celebrate my birthday, aunt debbie's birthday and granny's birthday which are all within 10 days of each other (pretty sure that was a run on sentence...sorry).
