pink lemonade cupcakes

cupcake:

1 box white cake mix

3 tbsps country time pink lemonade or strawberry lemonade drink mix

zest of 1 lemon

3-4 drops pink food coloring

frosting:

4 egg whites

1 1/2 cups sugar

1/2 cup country time pink lemonade or strawberry lemonade drink mix

1 cup salted butter (room temp)

1/2 cup unsalted butter (room temp)

1 tsp vanilla

3 tbsp frozen pink lemonade concentrate (thawed)

3-4 drops pink food coloring

lemon slice candies

follow box cake mix directions adding the country time drink mix, lemon zest and food coloring.   let cupcakes cool completely before frosting.  in heatproof bowl, set over saucepan of simmering water, combine egg whites, sugar, and country time drink mix and whisk until sugar is dissolved and mixture is warm to the touch. remove mixture from the heat and beat on high until stiff peaks form with whisk attachment. switch to a paddle attachment and on medium-low speed add the butter several tablespoons at a time. once butter is added beat on high for several minutes. on low speed, mix in vanilla, lemonade concentrate and food coloring.  pipe onto cupcakes and top with a lemon slice candy. 

macie's bff

we enjoyed our 2nd day of summer break today.  macie is missing her daycare, though, and doesn't quite understand that she won't be going back for a couple of months.  her best friend at daycare this year was eli; a sweet little boy from ethiopia.  he is changing daycare and his last day was a couple of weeks ago.  macie was sad saying good-bye to him.  i think she is over it now, but it still breaks my heart because she liked him so much.  

i have neglected my blog the last few weeks...mainly because there hasn't been anything eventful to post about.  i do have a new look that i am working on for the blog...hopefully i will have the changes made in the next week or two.

justin & jawna

last night justin (the drummer in blake's band and a firefighter) married sweet, beautiful jawna.  the wedding was great and the reception was so much fun.  my favorite parts of the wedding were the adorable hot pink satin bridesmaids shoes (sorry no picture) and the luscious candy bar!  macie's favorite part was the music and dancing.  she bawled when we left because she wanted to keep dancing.  on the way home she kept saying that her feet hurt from dancing so much!

number 9

"here's looking at you kid", "a walk to remember", "hollywood nights", "somewhere in the sun", "james bond: 007", "rock and roll", "red carpet affair", "masquerade", and "a night in paris."  is it crazy that i can recall all 9 proms that i have planned?!?  i plan all school year for prom and am always so relieved once they are over!  the school year is downhill from here :-)!  p.s.- those are my sweet junior class officers that worked their tails off helping me this year...thanks girls!

easter sunday

this post is week late...i've had a crazy week with prom activities.  last sunday, however, we had easter lunch at our house.  we were supposed to have an easter egg hunt for parker, peyton and macie, but it rained all day...so we ended up doing a "mini" hunt inside the house (notice the egg hidden in uncle brad's shirt in the last picture...we were desperate for hiding spots).  i took the easy way out for this "party" and used free printables from this amazing designer- http://partyboxdesign.blogspot.com/ - i love her stuff and was excited that she had such a cute, free theme for easter.
