pink lemonade cupcakes

cupcake:
1 box white cake mix
3 tbsps country time pink lemonade or strawberry lemonade drink mix
zest of 1 lemon
3-4 drops pink food coloring

frosting:
4 egg whites
1 1/2 cups sugar
1/2 cup country time pink lemonade or strawberry lemonade drink mix
1 cup salted butter (room temp)
1/2 cup unsalted butter (room temp)
1 tsp vanilla
3 tbsp frozen pink lemonade concentrate (thawed)
3-4 drops pink food coloring
lemon slice candies

follow box cake mix directions adding the country time drink mix, lemon zest and food coloring.   let cupcakes cool completely before frosting.  in heatproof bowl, set over saucepan of simmering water, combine egg whites, sugar, and country time drink mix and whisk until sugar is dissolved and mixture is warm to the touch. remove mixture from the heat and beat on high until stiff peaks form with whisk attachment. switch to a paddle attachment and on medium-low speed add the butter several tablespoons at a time. once butter is added beat on high for several minutes. on low speed, mix in vanilla, lemonade concentrate and food coloring.  pipe onto cupcakes and top with a lemon slice candy.
